The last few days it just happened to be that I've made, Mexican inspired creations for dinner...
~Large Tortilla Quesadillas (rolled)~
One night we had cooked whole grain rice with corn mixed with cooked chicken chunks, three cheese mix, spicy 'Sweet Baby Ray's' sauce (it's like a buffalo sauce we bought from Target), and large flour tortilla's. Sorry, I didn't take a picture to show you but it's really easy to make...
I bought 'boil in a bag' rice that you place over the stove in boiling water and let it cook 8 minutes. Once that is done I opened the bag of rice and poured it into the pot and mixed the corn with it and let it cook another minute or so. After that was done I had cooked the pre-cooked chicken chunks over the stove and then placed it onto the flour tortilla. Then I added the rice and corn to the tortilla. Lastly, I added all the fixins' we wanted to the dish, ie.) the three cheese mix and spicy sauce. After I had placed all the mixins' in the tortilla I used my George Foreman grill and wrapped the tortilla and place it in the grill. I let it cook 5 minutes and it was a crispy but soft perfection. You can make as much or as little as you want and add whatever tastes you like to the tortillas :) It was delicious:) Oh, and we added sour cream, tomato chunks and taco sauce to the side of the dish as a dipping sauce. Belle even loved this, I am surprised at it was a tad spicy. She loves chicken and cheese :)
Another night I mixed cooked whole grain rice, and cooked turkey together. I added cheese, tortilla chips, cheese slices, taco sauce and chili powder to a pan and layered it. (Mexican Dish creation-recipe in another blog below)...One of my hubby's favorites :)
Tonight is taco night, and I got some Spongebob taco creation (Belle inspired as she loves Spongebob)...yup, I said it right...There is a taco creation made by Ortega that has Spongebob on the taco box. So, that will be exciting tonight for Belle to help momma with :) We bought 93% lean beef (we normally don't eat beef but it's very lean and cooked thoroughly if so), cheese bland, butter lettuce, tomato chunks, taco sauce, Verde sauce and sour cream. It'll be great!
I also picked up organic chicken loins and made my own Chicken Parmesan...that was a total hit. We had corn and a slices of French Baguette and balsamic and olive oil dipping sauce. After I washed and dipped the loins in the egg bath and bread crumbs, I fryed and seared the chicken over the stove I placed it in a oven pan, sprinkled with Parmesan, slopped some three cheese tomato sauce onto the dish and added thin slices of Provolone cheese and cooked in the oven for 30 minutes at 350 degrees. I've been suffering from headaches as well due to me not having soda in the last four days...Now and then I've had a sip but I can say that I do not miss it. I am happy to say that I am craving water, water, water, all the time. Hopefully, I can get over the lingering headache. Other than that I've felt better. My hubby has limited the soda as well. This will be so much better for our health :) So, here's to four days and counting...Yay!

ReplyDelete....I know, a little bit at a time. I am going to be shopping for healthier snacks and meals as well. I have to do this gradual for us, but the soda thing I am not even missing :)
