Limoncello (correct spelling)...as you can see, I am not a great speller :)
Limoncello Liqueur (imported from Italy)
Brand: Pallini 27% Alc/Vol
http://www.pallini.com/
It's a very strong lemon liquor. It's great if you can get it in the freezer and let it chill overnight. It's gets almost gel like and is better tasting (in my opinion). You could probably find some drink combinations for this but I had just a shot of it and it was great. Ray and I found this at our local, Knight Spirits Wine and Liquor store. We had tasted something like it from Ray's father (as he makes his own wine) and he made a bottle himself. His dad is quite the wine maker. We've always had a laugh as when we've visited, he had his own 'bathtub gin' making in the guest bathroom. It's quite a sight. Looks like a lab in there...Haha. He's made allot of tasty wine :)
Mexican Dish Recipe (Family recipe carried down)
servings: 8 prep: 10 minutes total: 1 hour
What you need:
1 lb of lean Turkey
2 cans of lean re fried beans
1 package of Archer Farms Spanish rice (Steam fresh bag to cook in microwave)
1 bag of Bird's Eye corn (Steam fresh bag to cook in microwave)
12 slices of Kraft singles cheese
1 cup of Kraft 3-cheese shredded cheese
1 cup of Old El' Paso Taco sauce
1/2 bag of whole grain corn chips (crushed into bits)
1/4 cup of milk
**The dish is made at your tasting, you can add, decrease amounts, cut ingredients in half. It's up to you as to what would be tasty :) You will need an extra big pan to place ingredients in. We used a 9" x 12" pan, you will also be layering the ingredients in the pan before baking.
Directions:
1. PREHEAT oven to 350 degrees. You will be cooking for 30 minutes...
2. COOK the Turkey on the stove for 10 minutes, ensuring it is fully cooked. While you are cooking the turkey on the stove, you will need to pre-cook the Spanish rice and corn in the microwave. 4 1/2 minutes each in the Steam Fresh bag (before going to step 3)
3. ADD the re fried beans, corn, Spanish rice and 1/2 cup of the taco sauce together with the cooked turkey. This will take about 5-8 minutes to fully mix and bring to temp. on stove.
4. LAYERING THE INGREDIENTS. PLACE and SPREAD the cooked ingredients from the stove into an even layer in the pan. Just enough to cover the bottom.
5. ADD six cheese slices to the top of the cooked ingredients.
6. PLACE the crushed whole grain chips on top the the cheese slices, evenly covering the cheese and cooked ingredients.
7. You will repeat the process again until all the cooked ingredients from the stove are in the pan (steps 4,5, & 6)
8. Once you've used all the cooked ingredients and placed them in the pan, the final top layer of the pan is as follows: drizzle the rest of the taco sauce on top of the crushed chips, add the cup of shredded cheese and drizzle the milk slowly on the top layer. Let it sink into the dish.
9. COOK and place the pan in an 350 degree oven for 30 minutes.
10. DEVOUR and Enjoy. (We like to have a few slices of bread and butter with this dish) Is also great with a glass of Lipton tea or Margarita :)
Belle loves this dish :)
